This dish make for a great stick to your ribs meal. It can be use for breakfast or when the weather is wet and cold.
4 OZ or 1/4 pound of chunked Country ham
2 cups water
corn meal
Start off by boiling the water in a mucket .
Add the ham chunks to the water and let simmer for 10 min.
This amount of time will allow for the ham to tenderize and to make turn the water in to a flavorful brine.
Then add small amounts of corm meal to the brine while siring. the meal will quickly thicken like grits.
Once the meal is thickened spice to taste and let cool.
This recipe may be enhanced in may ways that are up to
your imagination. Like adding chopped onion and black pepper.
If you really want to enhance this dish add some
diced pieces of hoop cheese after the corn meal has thickened.
